Creamy Shrimp Pasta
1/2 package whole wheat penne
1 tbsp olive oil
1 lb peeled shrimp
1/2 tsp crushed red pepper flakes
1 zucchini, diced
2 cloves garlic
1/2 cup diced onion
1 can diced tomatoes, drained and chopped
1 cup heavy cream or half and half
2 tbsp minced fresh basil
Italian seasoning
Prepare penne.
Heat oil in large skillet over medium heat. Stir red pepper flakes and then add in onion, zucchini, and garlic. Cook until onion is tender. Add shrimp, tomatoes, cream, and salt. Simmer until sauce thickens, about 10 minutes. Stir cooked pasta into sauce, and heat through. Sprinkle with basil and serve.
